把鸡处理干净后里外以纸巾抹干。Clean the chicken thoroughly, inside and out, and pat it dry with paper towels.
将青葱、五香粉及酱油涂抹在鸡腹,然后把牛油粒塞在鸡的皮和肉之间。Rub the inside of the chicken with green onion, Chinese five-spice powder, and soy sauce. Then, insert the diced butter pieces under the skin and throughout the meat.
腌料混合均匀后再涂抹在鸡内外。Mix the marinade ingredients together and brush this mixture over the chicken, both inside and outside.
把烤炉预热至180℃以上下火烤鸡45分钟,然后将温度升至200℃,再烤10分钟,如果不够赤黄,继续烤多5~10分钟。Preheat the oven to 180°C with both upper and lower heat. Roast the chicken for 45 minutes, and then increase the temperature to 200°C for an additional 10 minutes. If it's not golden brown enough, continue roasting for an extra 5-10 minutes.
取出烤鸡后,将烤鸡汁倒入小锅里,加入少许清水,煮至稠后淋在烤鸡上即可。Remove the roast chicken from the oven, pour the pan juices into a small saucepan, add a little water, and simmer until it thickens. Drizzle this sauce over the roast chicken before serving.
